Customer-facing order board

The board customers read from the counter, in two columns: preparing (new and in progress, oldest first) and ready (newest first, so the latest number sits at the top-left). A ready order stays for 60 seconds after hand-over, and fresh marks the ones ready in the last 15 seconds so the screen can highlight them. The audience is everyone in the queue, so the payload carries only what may be shown: the number and a partly masked name — no items, notes or prices, and never a full name. Poll it every few seconds.
